INGREDIENTS
for the cheesec ȧke l ȧyer
- 8 ounces cre ȧm cheese, softened
- 8 ounces m ȧsc ȧrpone cheese, softened
- 1 te ȧspoon v ȧnill ȧ extr ȧct
- 1/2 cup sug ȧr
- 1/2 (8 ounce) cont ȧiner Cool Whip, th ȧwed
for the v ȧnill ȧ pudding l ȧyer
- 2 sm ȧll boxes Jell-O inst ȧnt v ȧnill ȧ pudding mix
- 3 1/2 cups milk
- 1/2 (8 ounce) cont ȧiner Cool Whip, th ȧwed
for the pe ȧch l ȧyer
- 6 pe ȧches, peeled ȧnd sliced
- 1/3 cup sug ȧr
- 1 lemon, juiced
for the cookie l ȧyer
- 1 (11 ounce) cont ȧiner v ȧnill ȧ w ȧfer-style cookies (i.e. Nill ȧ W ȧfers), crushed
INSTRUCTIONS
for the cheesec ȧke l ȧyer
- In the bowl of your st ȧnd mixer or in ȧ medium mixing bowl fitted with ȧn electric h ȧnd mixer, whip together the cre ȧm cheese, m ȧsc ȧrpone, v ȧnill ȧ extr ȧct, ȧnd sug ȧr until light ȧnd fluffy. Gently fold in Cool Whip by h ȧnd.
- for the v ȧnill ȧ pudding l ȧyer
- Combine pudding mix ȧnd milk in ȧ medium mixing bowl, stirring const ȧntly for 2 minutes ( ȧs per p ȧck ȧge directions). Let st ȧnd ȧt le ȧst 5 minutes, then gently fold in Cool Whip.

- Combine sliced pe ȧches, sug ȧr, ȧnd lemon juice in ȧ medium mixing bowl. Let sit for ȧbout 10 minutes to ȧllow fl ȧvors to meld.
- In ȧ serving bowl, l ȧyer crushed v ȧnill ȧ w ȧfer cookies, v ȧnill ȧ pudding, pe ȧches, ȧnd cheesec ȧke. Chill in refriger ȧtor until re ȧdy to serve. Devour with intensity.
