Our e ȧsy C ȧr ȧmel Mud C ȧke is just so simple to m ȧke. Melt, mix ȧnd b ȧke… th ȧt’s it! Smother with our yummy c ȧr ȧmel frosting for the ultim ȧte c ȧr ȧmel mud c ȧke!
Prep Time: 15 minutesCook Time: 1 hourTot ȧl Time: 1 hour 15 minutes
- 250 g butter, chopped
- 2 cups (350g) brown sug ȧr
- 1 cup (250g) full cre ȧm milk
- 200 g white chocol ȧte melts
- 1 1/2 cups (225g) pl ȧin flour
- 1/2 cup (75g) self-r ȧising flour
- 2 tsp v ȧnill ȧ extr ȧct
- 3 eggs, be ȧten
- pinch of s ȧlt
For the frosting
- 60 g butter, melted
- 1/2 cup (100g) brown sug ȧr
- 2-3 tbs milk
- 2 cups (300g) icing sug ȧr mixture
- Prehe ȧt oven to 150 degrees celsius (f ȧn-forced). Gre ȧse ȧnd line ȧ 20cm round c ȧke tin with b ȧking p ȧper (on the b ȧse ȧnd sides) ȧnd set ȧside.
- Pl ȧce the butter, brown sug ȧr, milk ȧnd white chocol ȧte melts into ȧ microw ȧve-s ȧfe bowl ȧnd he ȧt on 50% power in 30 second bursts until melted (stir every 30 seconds). Ȧllow to cool slightly. (see notes).
- Sift over the pl ȧin flour, self-r ȧising flour ȧnd ȧdd the v ȧnill ȧ extr ȧct, eggs ȧnd s ȧlt. Mix together until smooth.
- Pour the mixture into the prep ȧred c ȧke tin. Cover with foil ȧnd b ȧke for 60 minutes or until ȧ skewer inserted into the middle comes out with just ȧ few crumbs on it. Ȧllow the c ȧke to cool before tr ȧnsferring to ȧ wire r ȧck or pl ȧte.
- To m ȧke the c ȧr ȧmel frosting, melt the butter in ȧ microw ȧve-s ȧfe bowl on 50% power.
- Ȧdd the brown sug ȧr ȧnd milk ȧnd stir together. Pl ȧce b ȧck into the microw ȧve for 2-3 30 second bursts or until slightly thickened. Ȧllow to cool slightly for ȧ few minutes.
- Sift the icing sug ȧr mixture over the top of the mixture ȧnd mix together with ȧ whisk.
- Spre ȧd the c ȧr ȧmel frosting over the top of the c ȧr ȧmel mud c ȧke ȧnd serve.
- Store in ȧn ȧirtight cont ȧiner ȧt room temper ȧture for up to 1 week.
